Pacific TAFE students compete with industry practitioners

USP Pacific TAFE student, Dillon Fihaki preparing his dish in the Open Category medals at the Moffat National Salon Culinaire 2018.

Three students from The University of the South Pacific’s (USP) Pacific Technical and Further Education (Pacific TAFE) won medals at the Moffat National Salon Culinaire 2018 held at the Fiji National University (FNU) Nadi Campus from 16th to 19th of October.

Rebecca Dass and Sofia Takalaivuna, who are completing a Certificate III in Patisserie (Bakery and Pastry) won silver medals respectively in the Class 2, student category, while Dillon Fihaki who is completing Diploma of Culinary Arts and Management (Level 5) won a bronze medal in the Class 16, open category, which means he was up against full time industry professionals with years of experience.

An elated Rebecca said it was a great feeling to win a silver medal at the event and acknowledged the support of the Pacific TAFE Culinary Programme trainers and facilitator Frances Powell for the support and guidance.

“I was just looking for exposure at the Moffat National Salon Culinaire event and to win a silver medal is a bonus,” she said. “I would like to acknowledge the support provided by our trainers and facilitators at Pacific TAFE – their guidance and assistance during our training proved very useful.”

Coordinator Tourism and Hospitality Programme, Pasirio Kitione commended the students for their input of time during training, practice and preparation throughout the five weeks of training and four days of competition.

“All four students representing Pacific TAFE and facilitator Ms. Frances put in a lot of effort and time for practice, staying back after skills sessions on Thursdays and Fridays and coming in on Saturdays,” he said.

“I commend the contribution by Frances for her input to the event in 2018. Her two Patisserie students topped their class and events as no gold medals were awarded. Her dedication and that of her students deserves commendation.”

Meanwhile, Pacific TAFE, College of Business Tourism and Hospitality, Head of College, Mr. Hamish McCracken said, Pacific TAFE has set precedent in the yearly competition having won gold medal at last year’s event and three medals in this year’s event.

“I am pleased with the results and wish to congratulate our students and facilitators for their participation at the Moffat National Salon Culinaire 2018.” he said.

“The objective of the Salon is to promote and develop skills and recognise outstanding ability and individuals within the Fiji culinary sector. Winning two silver medals and a bronze in the Class 16 Open category, open to all industry personnel with extensive professional cooking experience, is a reflection to the quality of training and guidance we provide to our students here at Pacific TAFE.

This is only our second year competing in this competition but it is pleasing to see that we are achieving results consistent with the brand of quality that USP is known for.”
